This depends on when you can leave the port. If you can leave around 9:00 AM, it gives you some time to see the Kennedy Space Center, but you may not be able to explore it completely. You can probably enjoy a lunch at Cocoa Beach or shop around a bit. If your flight leaves later in the evening, that gives you a bit more room to roam about and explore theme parks such as Universal Studios or Sea World.
